The word “toddy” comes from the toddy drink in India, produced by fermenting the sap of palm trees. Its earliest known meaning was “a beverage made of alcoholic liquor with hot water, sugar, and spices” from 1786.

Slingsby Bonfire Toddy Recipe:

50ml Slingsby rhubarb gin
25ml pink grapefruit juice
50ml fiery ginger beer
1 tsp honey
50ml hot water

Method: Gently heat over the stove
To garnish: A cinnamon stick and cloves
